What you need
- 150g Pauls Athentikos Sweet & Creamy Vanilla
- Lemon juice
- 50g caster sugar
- 8 fresh figs
- 30g honey
- Handful chopped pistachio nuts
How To Make It
- In a small bowl stir the honey through the yoghurt and divide into 4 small ramekins and top with chopped pistachio nuts.
- Cut the figs in half and squeeze lemon juice over the cut surfaces. Press the cut face of the figs into a plate of caster sugar and coat well. Heat a fry pan over high heat and place the figs cut face down and do not move them around until sugar begins to caramelise and turn dark brown. Remove from the heat and serve immediately with the honey yoghurt.
