Gingerbread
What you need
- 1/4 cup softened butter
- 1/4 cup soft brown sugar
- 1 egg, lightly beaten
- 1/4 cup golden syrup
- 2 tsps ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp bicarbonate soda
- 1 1/2 cups plain flour
- 1 egg white, for icing
- 1 1/2 cups icing sugar, for icing
How To Make It
- Beat butter and sugar in a small bowl until light and fluffy.
- Add egg and golden syrup and beat until combined.
- Mix in spices and bicarb soda and then gradually mix in the flour to form a dough. Lightly knead the dough to bring it together into a smooth ball.
- Wrap dough in cling film and rest in fridge for 15 minutes.
- Pre-heat oven to 180oC and a line baking tray with baking paper.
- Roll out dough (in batches depending on the size of your baking tray) on a lightly floured surface to 4 mm thickness. Cut out gingerbread men and star shapes and place on baking tray.
- Bake in oven for 7-9 minutes or until brown. Cool on a wire rack
- When completely cooled down the gingerbread men and stars with icing.
- Store the finished gingerbread shapes in an airtight container until ready to make the Gingerbread Trifle.
Icing
- Beat egg white in a small bowl using an electric beater until soft peaks form.
- Gradually beat in the icing sugar until stiff peaks form.
- Place icing in a piping bag fitted with a fine nozzle and use to decorate the gingerbread.
